There are so many awesome recipes that can be made with shredded beef. I’m sharing a 3 ingredient slow cooker spicy shredded beef recipe that I used for my “Kick Off Nachos”. I’m also sharing some recipe tips that helped turn all of my other toppings into a flavorful dish and then, my drink of choice to finish it off.
Why do I call them “Kick Off Nachos”? Well there are a couple of reasons… First of all My hubby and I love football and we are currently getting into the playoffs. We like to enjoy a meal or snack while watching the big game. The other reason is because they provide a definite “kick” that comes from one of the ingredients I used in my shredded beef and toppings! Yep! I was so pleasantly surprised at the wonderful results from this easy recipe. Seriously, those were some yummy nachos! And when is say “were” I mean they were gone in no time flat! My husband couldn’t wait to get his hands on them…
Ok so let’s get to the recipe! For the shredded beef I wanted it to be as easy as possible yet with delicious results. Thus the three flavorful and spicy ingredients. I purchased all of my ingredients at Food City. I love their fresh homemade tortilla chips and they have a wide variety of Mexican spices. Currently if you buy two Coca-Cola 1.25 liter products and two El Yucateco Hot Sauce products you will receive $2.00 off your deli/meat order. Winning! I needed all of those products!
Ingredients
3-5 lbs of chuck roast or brisket
2 cups of Coca-Cola
1/2 cup or 4 oz bottle of El Yucateco Hot Sauce (there are several flavors. Some of them are hotter and some a bit more mild yet still spicy. I used the Carribean flavor which is pretty hot.) For less spice I suggest using 1/4 cup.
1 packet of onion soup mix
Instructions
Brown your roast on all sides and place in the slow cooker on low heat.
Mix the remaining 3 ingredients well and pour over the roast covering it all.
Cook on low for 6-7 hours or until fully cooked and tender. The meat should break apart and shred easily with a fork.
Remove the roast from the slow cooker and shred it in a separate dish.
You can choose to dispose of the juices or mix some of it in your meat depending on the flavor and texture of your meat. Mine didn’t need it.
Your meat is now ready to use as a topping for nachos or filling for tacos, burros or enchiladas.
And I’m making some NACHOS!! To put together the nachos:
- Pre-heat oven to 375°
- On an oven safe dish: layer chips, then cheese, then black beans (seasoned with El Yucateco Hot Sauce and garlic salt), shredded beef, and top with another easy layer of cheese.
- Cook for 7-10 minutes at 375° until cheese is melted and slightly bubbling.
Look at it bubbling in the oven!
These nachos were already off to a quick start and the meat was so flavorful with a spicy “kick” to it. I also wanted to keep my toppings simple. I chose to top them off with these 3 final ingredients and some fresh lime for garnish:
1) Fresh diced tomatoes
2) Fresh guacamole. The recipe I used was:
- 3 large avocados
- 1/2 cup sour cream
- 2-3 tablespoons regular green El Yucateco Hot Sauce
- 1/2 fresh squeezed lime juice
- 1/2 teaspoon garlic salt
- 1/2 cup diced tomatoes or pico de gallo
- Mash or blend your avocado then add and mix remaining ingredients
3) 8-12 oz Sour cream. My tip for making it a great dip:
- add 2-3 tablespoons of El Yucateco Hot Sauce (I used red)
The results: “Kick Off” Spicy Shredded Beef Nachos
One of the things I liked most about these nachos is that they didn’t need any hot sauce for topping. They already had enough of a spicy kick from adding the El Yucateco Hot Sauce to many of the ingredients and that wonderful flavor carried throughout. The “spiced up” sour cream and guacamole were the perfect accompaniment.

My drink of choice is Coke Zero but I also love Sprite with Mexican dishes. And I like to add some “fun” to my drinks… So, while your nachos are baking you can whip up my favorite drink:
- 16 oz of any coke product or Sprite
- 2-3 Tablespoons of grenadine (this is a non alcoholic cherry flavoring)
- 2-3 fresh lime wedges (squeeze in lime juice and add slices to drink)
Grab the remote control, your sodas and this delicious dish…
It’s now ready to devour while you watch the big game!
These really were good! We ate them two days in a row. 🙂

I just got around to reading your blog! Wow this recipe looks amazing. I am looking forward to trying it. We don’t like it too hot, so I will pick a mild sauce. Guess it goes well with a movie too! The drinks look like fun, I will try them too.
