Can you believe I am sharing a recipe today? I must admit that this Green Beans Almondine dish is just too hard to pass up and not share! An early hint might be the butter, honey, red peppers, and almonds. But read on and you decide if this dish is for you!
Being an empty nester with a husband who works a very busy schedule paired with my odd schedule means that I don’t do much cooking. That has not always been the story though. I am very comfortable in the kitchen and have a few dishes that are termed my “signature dishes”. When it comes to vegetables, this is one of them! The men in our family {my hubby and son in law} aren’t the fondest of vegetables but they both absolutely love these. They usually make the menu on special occasions such as Easter and Thanksgiving, and here they are!
Green Beans Almondine
I made these as a side dish with our dinner a few weeks ago. Shortly before dinner I said, “Hold on folks! This dish needs to be shared with my fabulous readers at inkhappi.” I then proceeded to take a couple of photos and that brings us to todays post. On a side note, the life of a blogger is sometimes filled with spontaneous photo opportunities. My family has had to learn patience at times like these. In spite of it all I got a couple of photos to share. I am going to take you through the steps of making this very easy and delicious dish!
Green Beans Almondine
- about 1lb green beans
- 1 small red pepper
- 1/4 cup slivered almonds
- 3 TBL Butter
- 2 TBL Honey
- Salt & pepper to taste
Steam green beans to desired softness. While the green beans are cooking:
Cut red bell pepper into small slivered pieces.
- Simmer on med-low heat: butter, honey, pepper until butter is melted and the pepper is tender. Add in the almonds and stir mixture together.
When green beans are cooked to desired texture place them in a bowl and lightly salt and pepper them.
Pour the butter mixture over the dish of green beens ensuring they are all covered well and the peppers and almonds are evenly distributed.

Why are these so good? Why are they such a hit with the men in my family? Could it be the sliced red peppers? Or the slivered almonds? Maybe its the butter and honey! I will leave the answers for you to figure out but I can tell you one thing… Mmmmm, when you saute’ all those ingredients together and drizzle it over a dish of green beens you’ve got yourself a fine dish of vegetables!
