Hawaiian Haystacks
One of my favorite meals!
Why do I love these so much? Because I put a lot of yummy fresh toppings on it! It’s easy to make and each person can personalize it to fit their own taste preference. Which reminds me of an experience I had a couple of years ago at a family reunion. My family was in charge of the evening meal and I decided to have Hawaiian Haystacks. I know most people choose different ingredients to put on their Hawaiian haystacks. I usually choose quite a few toppings which I did for this occasion. Anyway… my large extended family spent that whole meal discussing what toppings they would choose if they could only have one, or two toppings! Seriously two toppings? This really went on and on and we offered different options like ranking toppings and other unusual toppings we could add. If you know my family this got pretty intense. We argued (in fun), laughed and probably came to no clear conclusions but it was a good time. It was a good meal too!
Recently, I had a couple of family members over for dinner and guess what I prepared?
Yep!
Hawaiian Haystacks!
We even recalled the family reunion meal and my sister experimented with the toppings to find her favorite! I use different toppings based upon what I may have or is easy to get.
This is how I came out with this meal:
I love fresh fruit and veggies but I can’t deny that the cheese and almonds help make this dish. Here are some topping options. Just pick a few of your favorites and you really can’t go wrong with this meal. {I will give you my recipe following this}
TOPPINGS:
Cheese
tomatoes
celery (gotta add some crunch)
peppers of any color (I love the red and green on these. They blend so well with the rice and chicken gravy)
olives
mushroom
peas
green onion
pineapple
mandarin oranges
coconut
slivered almonds
chinese crunchy noodles
anything else… but the kitchen sink! Hahah

Ok so I am one of those people that doesn’t use recipes and I have had enough experience cooking that I kind of know what works and what doesn’t in the kitchen. I bet you didn’t know that about me, huh! Yes, I have cooked a lot in my days but I am not cooking quite as much these days, therefore I don’t share many recipes on my blog. I do plan on sharing more recipes this year though In fact I am attending a food bloggers conference at the end of this month! I love to make things as easy as possible when I cook. This is a crock pot recipe.
Here is how I make my chicken gravy:
Hawaiian Haystacks –Thats whats for dinner!
This can be done on the stovetop or in the crock pot.
- Cooked Rice (see instructions)
- TOPPINGS of choice (may include celery (tomatoes, cheese, red & green peppers, olives, mushrooms, green onion, slivered almonds, pineapple, mandarine orange wedges, coconut, chinese noodles or wontons, etc…))
- 3 lbs of chicken tenders (I use frozen because I love how they cook up so tender in the crock pot)
- enough chicken broth to cover the chicken to cook
- 1 26 oz can cream of chicken soup (or 2 10.5 oz cans)
- 1 10.5 can cream of mushroom soup
- 1/2 -1 cup sour cream
- 1 packet lipton onion soup mix
- salt and pepper to taste
- Milk if necessary for consistency
- Cover chicken with broth in crock pot and slow cook until tender enough to easily shred. After shredded drain liquid leaving about 1 cup in with the shredded chicken, Add remaining ingredients stir and heat on low until ready to serve. If you wont be serving for a while, hold out the mushroom soup and add it closer to serving time to get a thicker consistency. If you want it thinner add some milk.
- Cook rice of your choice. Allow a cup or more per serving based on your appetites.
- Its time to serve!
- Pour chicken gravy over rice and then to each their own on toppings. Thats the fun part! 😉
- *If you have leftovers you can make a soup the next eve with most of those ingredients!
